Cake “Black forest”
Such a beautiful and delicious cake will be a real highlight of the family
Dough: 4 eggs, 120 g sugar, 90 g flour, 30 g butter, 20 g of starch, 15 g of cocoa powder, 1 pinch of cinnamon
Filling: 400 g frozen cherries, 200 ml of water, 200 g sugar, 1 glass (50 ml) Kirsch, 1⁄₃ tsp. cinnamon
Cream: 250 g cream with a fat content of at least 30%, 1 sachet (10 g) vanilla sugar 80 g dark chocolate, at least 60% cocoa
To decorate: 250g cream fat content of at least 30%, 1 heaping tsp. of powdered sugar, 150 g of chocolate, a few nuts or marzipan, 1 tbsp sugar
2. Prepare the syrup: pour the sugar with boiling water and stir to dissolve, add Kirsch. Pour the cherry syrup and leave for a few hours (preferably overnight) to marinate.
3. Bake the sponge cake. To do this, whisk the yolks with half the sugar until thick light weight.
4. With clean beaters beat the egg whites until thick dense foam. Then add the remaining sugar and whisk again until the mixture becomes shiny and thick.
5. Stir gently with a spoon whites and yolks. Fold in the sifted flour with the cornstarch, cocoa and cinnamon. Stir as gently as possible.
6. Pour melted hot butter. Another mix from the edge to the middle, trying minimally upsetting a lot.
7. Spread the batter into the form. Bake at 200°C for 25-30 minutes.
8. Prepare cream and chocolate cream. Pour the cream into a saucepan, add the vanilla sugar and while stirring, heat until almost boiling. Put the chopped chocolate, remove from heat and stir until you get a smooth, shiny mass. Cool in the refrigerator for 2-3 hours to become completely cold.
9. Cold chocolate cream beat with a mixer at maximum speed, like a normal cream. When the mass becomes a lush, dense and strongly brighten, stop. The cream ready to shift into a pastry bag.
10. Assembly. The cherries into a sieve to stack the syrup. Put a dozen berries for decoration.
